Chocolate Guinness and Bailey’s Cupcakes

spd cupcake_1Happy Saint Patrick’s Day!  I hope you all have the chance to relax, drink a beer, and celebrate all things green.  Beer not your thing?  These Guinness and Bailey’s cupcakes might just be the perfect substitute.  Especially if you’re a Bailey’s drinking family like mine (hot chocolate and Bailey’s even has its own name in my family- a “special.”  We’re not obsessed or anything).

spd cupcake_3These cupcakes are everything a cupcake should be– soft and chewy, chocolatey, with a subtle hint of stout that makes them feel new and special.  And the frosting!  Thick, creamy, and just boozy enough for a post-5 o’clock pick me up.  Make enough to share at your Saint Patrick’s Day party– your friends and family will definitely thank you.  Oh, and your tastebuds will too.  But the best part?  You won’t get a hangover from these delicious little desserts!  And that’s just the kind of boozy treat I like. 

Chocolate Guinness and Bailey's Cupcakes
  1. 3/4 cup + 1tbs sugar
  2. 1 cup flour
  3. 7 tbs cocoa powder
  4. 1/2 tsp salt
  5. 1 tsp baking powder
  6. 1 egg
  7. 1/2 cup stout, Guinness suggested
  8. 1/2 cup unsweetened apple sauce
  9. 1/4 cup milk
  10. 1/4 cup sour cream
  11. 1 tsp vanilla
  12. 1 1/2 tsp canola oil
  1. 8 oz cream cheese, softened
  2. 3/4 cup confectioners sugar
  3. 2 tbs Bailey's
  1. Preheat oven to 350 F.
  2. In a large bowl, combine the wet ingredients. Mix until well combined.
  3. In a medium bowl, sift together dry ingredients.
  4. Add dry ingredients to the wet ingredients, mixing between additions.
  5. Mix batter until smooth.
  6. Spoon into greased mini cupcake tins.
  7. Bake 10 minutes, or until a toothpick is inserted and comes out clean.
  8. Allow to cool completely before frosting.
  1. Combine cream cheese, confectioners sugar, and Bailey's.
  2. Using a hand mixer, mix until smooth.
  3. Refrigerate until ready to use.
