Happy Fall! Time for sweaters, boots, scarves, apples, baking, and– most importantly– pumpkins! Have you had your requisite beginning-of-autumn pumpkin spice latte yet? I have, and my seasonal addiction to them has begun anew. Fall is my favorite season, and I think it’s because I love all the warmth and coziness: the comforting flavors of cinnamon and nutmeg, the heat in the kitchen while baking, bundling up to go outside. This pumpkin spice smoothie has all the comforting flavors and richness of a pumpkin pie, but doctored up for breakfast. Pumpkin, greek yogurt, and oats blend together to make a thick and filling smoothie perfect for breakfast on the go or a lighter (but still indulgent) before-bed treat.
- 1/3 cup pumpkin puree (NOT canned pumpkin pie mix!)
- 1/3 cup plain greek yogurt
- 1/2 banana, frozen (you could use 1/2 a fresh banana, and add a handful of ice cubes)
- 3/4 cup milk
- 1/4 cup oats
- 1 tsp cinnamon
- dash of nutmeg
- dash of vanilla extract
- Add all ingredients to a blender, and blend until smooth and creamy.
